Expert Tips:

If you prefer orange or yellow tomatoes, you can substitute for red and green.  Or, you can include any of your other favorite veggies, such as 1/2 cup diced zucchini or 1/2 cup diced carrots.

For added flavor, add 2 cloves of minced garlic and 1 - 2 tsp minced fresh ginger.

HMR Entree Recipe - Risotto Peanut Lettuce Wraps

You will need:                               

  • 1 HMR Mushroom Risotto Entree
  • 1/2 cup red and green peppers, diced
  • 1/2 cup onion, diced
  • 1/2 cup water chestnuts, diced
  • 1 TB low sodium soy sauce
  • 1 TB PB2 powder
  • 4 iceberg lettuce leaves

 

Directions:

Spray saute pan with cooking spray.  Saute peppers and onion until soft.  Add Mushroom Risotto Entree and water chestnuts and cook until warm.  Stir together soy sauce and PB2.  Add soy sauce mixture to saute pan and mix thoroughly.  Spoon into iceberg lettuce leaves, roll, and enjoy!
