Baked Apples and Pears

You will need:                               

1 large lemon peel, slivered

4 large apples (Rome Beauties are best, but any apple can be used)

4 large pears

4 TB sugar

1 tsp cinnamon

1/2 cup water

 

Directions:

Preheat oven to 350.  Remove yellow outer peel from lemon with a potato peeler.  Cut peel into thin slivers.  Core apples and pears.  Arrange in a large, shallow baking dish so each fruit is upright.  In a separate bowl, mix sugar, lemon peel, and cinnamon.  Fill hollowed-out fruit with the sugar mixture.  Pour water around fruit on bottom of dish.  Bake uncovered for 30 minutes (or omit water and microwave on high for 12 - 15 minutes in a covered baking dish).  Spoon sauce from pan over fruit before serving.
