White Bean and Roasted Pepper Dip

You will need:                               

1 onion, chopped

2 garlic cloves, pressed or minced

2 - 15 1/2 oz cans white cannellini beans, including juice

1/2 cup broth, low-fat, low-sodium

2 roasted peppers (canned) in water

1 TB dried basil

1 TB dried parsley

pepper (to taste)

 

Directions:

In medium frying pan, saute onion and garlic in non-stick cooking spray until soft.  Add all other ingredients and cook for 5 minutes.  Puree in blender or food processor.  Cool.  Serve at room temperature with fresh, cut up vegetables.
