You will need:
- l large bag chopped kale, or 2 large bunches chopped in 1/2 in pcs.
- 1 14 oz. can diced tomatoes
-1 14 oz. can white, navy, or canelloni beans
-Vegetable broth, boullion, or base
-Salt and cayenne or other pepper to taste.
Directions:
1. Place kale in a large pot, add about 1 inch of water, and cook over med high heat. With tongs, pull kale up from bottom of pot, until all contents of pot start to wilt and cook. Cook for about 10 minutes, adding liquid if necessary.
2. Make a well in the pot of kale and stir in a tsp of vegetable base, or add a cup of vegetable broth or a large boullion cube, crushed.
3. Add one can of undrained diced tomatoes (Muir Glen Organic is my favorite).
4. Add one can of drained and rinsed white beans (I look for whatever variety has the highest fiber).
5. Stir all ingredients together.
6. Season with a bit of cayenne pepper, and some kosher salt. Makes a lot!
