Expert Tips: 

Combine Very Green Soup with the following HMR entrees for a complete, nutritious meal:

Very Green Soup

You will need:                               

2 - 10 oz packages frozen peas

2 - 10 oz packages frozen chopped spinach

1 onion, chopped

4 cups vegetable or chicken broth

1 bay leaf

1 TB dried basil

1 TB tarragon

1 cup lowfat milk or buttermilk OR ½ cup low-fat sour cream

1 TB soy sauce

½ - 1 tsp curry powder

¼ - ½ tsp salt

Pepper (to taste)

 

Directions:

Combine peas, spinach, onion, broth and herbs.  Simmer 20 - 30 minutes.  Remove bay leaf.  Puree soup in a blender or food processor. Add milk, buttermilk or low-fat sour cream, soy sauce, curry powder, salt and pepper while blending.  Heat soup to serve, but do not boil.  Soup is good hot or chilled.
