Expert Tips: 

Combine the following HMR entrees to the Sweet Potato Soup for a complete, nutritious meal:

  • Mushroom Risotto
  • 5 Bean Casserole
Heat the entree for one minute in the microwave and then add to prepared soup.

 

Sweet Potato Soup

You will need:                               

2 sweet potatoes, cut into 1 inch cubes

1 onion, chopped

garlic powder, to taste

pepper, to taste

2 cans low-sodium, low-calorie chicken broth

 

Directions:

Spray baking dish with PAM. Preheat oven to 325 degrees.  Place sweet potatoes and onion in baking dish and add garlic powder and pepper, to taste.  Bake for 25 minutes and allow to cool for 10 minutes.  Place baked veggies in a blender with 2 cans of chicken broth and puree to desired consistency.  Be sure to vent the blender!
