Expert Tips: 

Add 1/2 of a cabbage (cut into strips) or 2 cups of chopped kale or spinach to this soup for even more nutrition.  Simply add the greens to the onion and garlic and saute.  Follow directions, making sure to puree the soup at the end before serving.

HMR Recipe - Pumpkin Curry Soup

You will need:                               

  • 3 packets HMR Chicken Soup
  • 1 cup diced onion
  • 2 - 3 garlic cloves, minced
  • 15 oz can pumpkin
  • 1 1/2 tsp curry powder
  • 1/2 tsp white pepper
  • 30 oz water

Directions:

Spray the bottom of a soup pan with PAM.  Mix water and chicken soup and set aside.  Saute onion and garlic over medium heat until soft.  Add spices and cook for a minute.  Add soup mixture.  Stir in pumpkin.  Simmer for 30 - 45 minutes, stirring frequently.  Puree soup in blender (may need to do in batches, remember to vent the top of your blender).  Blend until smooth.  Makes 4 - 6 servings.
