Orange You Glad You Can Eat the Whole Pot - Butternut Squash Soup

You will need:                               

  • PAM or Misto Olive Oil +2T Water
  • 1/2 large onion, chopped
  • 2 garlic cloves, peeled and chopped
  • 1/2 bag baby carrots, sliced
  • 1/2 cabbage, sliced thinly
  • 5 small potatoes, cut into 1/4 inch cubes
  • 2 cups water
  • 4 cups creamy butternut squash soup (Trader Joes)
  • 1 t rosemary
  • 1 t thyme
  • salt and pepper, to taste

Directions:

In a 4-quart pot, spray the bottom with PAM or other cooking spray.
Cook the onion,  garlic and carrot until softened, about 10 minutes, adding water as needed to prevent burning. 

Add the cabbage, and spices. Saute for 2 minutes on high. Add 2C water and potatoes. Bring to a boil for 3 minutes.

Add Butternut Squash Soup.
Bring the soup to a gentle simmer and cook for 10 - 15 minutes, until the potatoes are soft.

Add salt and pepper to taste.
