Grilled Sweet Potatoes with Tangy Vinaigrette

You will need:                               

 

2 pounds sweet potatoes, peeled

water

1 TB soy sauce

1 TB olive oil

For the vinaigrette:

4 scallions, chopped

2 TB fresh parsley, chopped

1 TB garlic, chopped

1 TB grated fresh ginger

ΒΌ cup rice wine vinegar

1 TB soy sauce

 

Directions:

Put potatoes in a saucepan.  Add water to cover and simmer until tender, about 15 minutes.  In a bowl, slice into 1 inch pieces.  In a separate bowl, combine sauce and oil.  Brush on both sides of potatoes.  Grill or broil potato slices until browned.  Cool.  Combine scallions, parsley, ginger, garlic, vinegar and soy sauce.  Drizzle mixture over potatoes.  Serve hot or cold.
