You can add or substitute any of your favorite beans in this meal for a scrumptious, fiber-filled meal!

 

Beanpot Special

You will need:                               

3 medium onions, chopped

2 cloves garlic, minced

2 green bell peppers, seeded and chopped

2 stalks celery, chopped

2 medium zucchini, chopped

1 - 16 oz cans tomatoes, chopped

15 ½ oz can red kidney beans

15 ½ oz can great northern beans

15 ½ oz can garbanzo beans

15 ½ oz can corn

½ cup water

½ tsp chili powder

2 tsp dried basil

¼ tsp black pepper

1 bay leaf

1 tsp salt

 

Directions:

Put the chopped vegetables in a pot.  Add the canned items, including all the juices, water and spices.  Bring the mixture to a boil, reduce heat, cover and simmer for 2 hours.  Remove bay leaf before serving.
