This is a terrific Brunch or "breakfast for dinner" meal. Leftovers can be used as a stir fry starter or wrapped in a whole grain tortilla for a delicious, grab-and-go lunch.
Tantalizing Tofu Scramble with Kale
You will need:
- 1 tsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 package firm tofu, drained and cubed
- 1 tsp cumin
- 1 tsp tumeric
- 1/2 -1 cup Organic Vegetable Broth
- 2 cups chopped Kale (or other greens)
- salt and pepper to taste
Directions:
Gently saute onions and garlic in olive oil and add vegetable broth as needed to keep from burning. Simmer until onions are soft. Add tofu, cumin, and tumeric, stir over medium heat for 2 minutes. Add 1/2 cup vegetable broth and kale. Turn heat to medium-low and simmer until kale is tender, adding extra vegetable broth if needed.
Expert Tip:
Serve with roasted potatoes and steamed asparagus or sliced tomatoes and avocado.
