Vegan Recipe - Brown Rice Pudding

Here is a great recipe for using leftover brown rice. Or, if you are just in the mood for something sweet, cook up some brown rice specifically for this recipe!
Brown Rice Pudding (recipe from Nutrition MD)
You will need:
- 2 cups cooked brown rice
- 1 1/2 cups vanilla rice milk (or other milk substitute)
- 3 TB raisins (or other dried fruit)
- 2 TB pure maple syrup
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
Directions:
Combine all ingredients in a saucepan and bring to a slow simmer. Cook uncovered, stirring occasionally, for about 20 minutes or until you reach desired consistency. Enjoy warm or chilled!
