HMR Recipe - "In the Box" Thanksgiving Desserts

  
  
  

happy thanksgivingDid you know that the average American will consume anywhere between 3,200 - 4,500+ calories on Thanksgiving Day?  There is Thanksgiving Day breakfast, appetizers, the meal itself, dessert, and then the "after meal" meal...turkey sandwiches, some more stuffing, another small slice of pie...Yikes!!  That all equals a lot of PA!

Alicia posted a blog earlier this week about how to plan a Healthy Thanksgiving Day.  If you have not read it yet, I encourage you to do so and have your plan ready.

If you are like me and have a sweet tooth, the dessert table is often the most challenging...the one calling my name with every sweet, gooey concoction.  Well, there is an alternative...below are a few delicious dessert recipes that will help you stay on track and won't require 5 hours of PA to burn off!

Baked Fruit Cobbler

You will need:

  • 3 cups fruit - berries, peaches, pears, apples (your choice)
  • 2 HMR Multigrain Cereal packages
  • 2 - 3 scoops HMR 120 Vanilla
  • splenda
  • cinnamon (optional)

Directions:

Preheat oven to 375 degrees.  Spray an 8 x 8" pan with PAM.  Add 3 cups of fruit and sprinkle generously with Splenda.  Add a little cinnamon if you like.  In a separate bowl, combine the HMR multigrain cereal, HMR 120 Vanilla, about 1/3 cup Splenda, and another sprinkle of cinnamon (optional).  Sprinkle topping evenly over fruit.  Drizzle some water over the top until topping is wet down and no longer powdery.  Spray with sugar-free DaVinci butter rum flavored syrup or sugar-free maple syrup.  Bake for about 45 minutes or until golden on top.

Berry Parfait

You will need:

  • 2 packets HMR 70+ Vanilla
  • 2 - 3 cups berries or your choice of fruit (bananas, cherries, etc.) - if frozen, thaw first
  • cold water

Directions:

Empty HMR 70+ Vanilla into bowl.  Slowly add cold water and stir until you reach desired consistency.  In a parfait or ice cream glass, alternate layers of Vanilla pudding with layers of fruit.  Top with a dollop of sugar-free, fat-free Cool Whip.  Expert tip:  add a TB of your favorite sugar-free, fat-free Jello pudding mix to your 70+ Vanilla (cheesecake, lemon, white chocolate, etc.).

Banana Ice Cream

You will need:

  • 2 very ripe bananas
  • 1 scoop or packet of HMR Vanilla Shake Mix (120, 70+, 800, 500)
  • 2 TB water

Directions:

Spray a plate with PAM.  Peel bananas, cut into 1" lengths, and arrange on plate so they don't touch.  Freeze for an hour or more (until frozen).  Put the frozen bananas into a food processor and process until smooth.  Scrape the sides down and blend again, adding the shake mix and water.  Blend for 3 - 5 minutes more and enjoy!

Pumpkin Mousse

You will need:

  • 2 packets HMR 70+ Vanilla
  • 1 cup canned pumpkin
  • 1 cup ice
  • 1 tsp pumpkin pie spice
  • 1 - 2 TB sugar-free, fat-free Cheesecake Pudding Mix
  • vanilla, to taste
  • splenda, to taste

Directions:

Put a little water in food processor, add ice and crush.  Add pumpkin, 70+ shake mix, pudding, and remaining ingredients and blend for several minutes more, until thoroughly blended.  Eat immediately.
