If you love the sweet and tangy taste of pineapple - this HMR shake is for you. (Remember you can use any HMR shake, HMR 120, HMR 500, HMR 800, or HMR 70+. It's easy and delicious and will give you a head start on your day, or the pick me up you need in the middle of the afternoon. It's hard to find anything at a Mexican Take Out for less than 800-1200 calories. Fried tortilla stuffed with beef or chicken will bust your diet budget - but even the veggie entrees are often sauteed in oil and packed with high fat cheese and sour cream! The beans are usually cooked in lard or some other animal fat which means hidden calories galore!

Try this quick and very healthy Mexican Salad using the HMR entree, Mexican Enchilladas with Beef, instead. It comes in at about 500 calories - and you can dice it and spice it by adding more veggies, too, like chopped peppers, salsa, avocado, tomatoes, black, red or pink beans and onions.

If you like frozen corn instead of canned, simply pour the corn in a strainer and run hot water over it until it thaws (and you can eat the HMR Mexican Enchillada entree at room temp - or just slightly heated if you prefer a cold salad). Canned corn sometimes has sugar added - so always read the label!

Finish off the HMR Mexican Enchillada Salad with a healthy sprinkle of cilantro for a cool, authentic flavor.
